Abstract

The Food and Agriculture Authority of the United Nations has estimated that 25% of agricultural crops are infected with mycotoxins. There is more than one mycotoxin, with their numbers reaching hundreds. The most dangerous of these mycotoxins are aflatoxins (the most dangerous of which is aflatoxin B1). Aspergillus mushrooms of all kinds are considered one of the most important fungi that secrete these toxins, which are carcinogenic to liver and kidney cells mainly. Among the many compounds examined to mitigate the adverse effects of aflatoxin B1, antioxidants are being investigated because of their ability to reduce disease formation by either induction or inhibition of key enzyme systems and their hepato-protective effect.
The aim of the study was to investigate the protective effect of adding some antioxidants such as Lycopene and /or Grape seed proanthocyanidin extract (GSPE) powder against aflatoxin side effects triggered by 35 successive day of treatment.
