Abstract This work was performed to evaluate the effect of different solvents on extraction of bioactive compounds of mallow and Pelargonium graveolens aerial parts. Furthermore, to assay antioxidant and antimicrobial activities of mallow and P. graveolens aerial parts extracts as well as to study the antimicrobial activity of P. graveolens essential oil. In addition, to study the effect of using mallow and P. graveolens as substitution of wheat flour at different levels on chemical, physical and sensory properties of biscuit. |
