Abstract

Milk provides an ideal medium for the growth of microorganisms and serves as D. potential sour-c e of spreading of several diseases. In Alexandria city typhoid fever is an endemic disease that results in many carriers and therefore milk and ita products can represent a real dm1ger in spreading this disease and others because of the unhygienic c ondi t ions and poox’ sani to. t ion on which milk is produc ed and handled. The present study was undertaken first to search for Salmonella oIganisms in raw milk from different dairy farms as well as market milk in Alexandria and to identity their species, second to study the efficiency of secondal~ enrichment at elevated temperature and to compare it with the conventional method; third to study the probab­ility of finding Salmonellae in fermented milk and Damietta soft cheese, and fourth to judge the sanitary quaIi ty of milk. A total of 100 milk samples were collected from dau’y far~ and retailers in Alexandria city with diff­ erent social classes. Moore swab was used and then inoubated at 41.500 for 24 hours in tetrathionate broth they were then plated on the following med1a:B.G..S. agar-MacC. ago.:r o.nd. S-S agar. Then the isolated strains were ident if ied both biochemically and serol­ ogically: 1- Out of the 100 examined milk samples 15 were positive for Salmonella with a total 130 isolated strains. 2- A representative samples of 71 strains were selected and identified completely.
