Abstract The present study is designed to study the possibility of converting the nonmarxetable sixes of carp fish into protein concentrate (fpc) of high biological value in order to be useful in marketing. Also the amino acids composition and the chemical score of fpc are studied in order to throw more light on its possible uses for supplementing the other form protein quality food stuffs. Carp fish cyprinus carpis from El-Zawia fisk farm is used. Extraction of lipids is carried out using hexane-ethanol azeotropic. Fish is caught in November 1983 from El-Zawia, fish farm in Kafr El Sheikh governorate. It is beheaded, eviscerated and washed in tap water. Then it is blanched in water at 60 c for one hour. Bones and skins are removed. The flesh is then minced in a meat grinder. The ground flesh is then heated in 0.5 % acetic acid at 60 c for one hour. |
