Abstract This work is planned to study the role of b. Cereus in dairy industry. For this purpase, samples of yoghurt, cheese and powdered skim milk are examined for the presence of b. Cereus. Four of the b. Cereus isolatea prove to be producing toxin strains. One of the these strains is used to study the behaviour of such an organism during the processing and storage of yoghurt and Domiati cheese. It can be concluded that b. Cereus toxins could not be easily produced into yoghurt or Domiati cheese because of the acidilty, metabolic substances of the lactic acid bacteria and the solt in the cheese. There for, a food poisoning out break by b. Cereus toxin rarely occurs by cating contaminated yoghurt or Domiati cheese. However, food poisoning hazards by b. Cereus toxins can occur with eating improperly stored warm rice food containing yaghurt contaminated with b. Cereus. |
