Abstract

Mungbean Vigna radiata (L.) Wilczek (Phaseolus aureus Roxb.) is a leguminous species. It is one of the most important pulse crops in certain countries of the world. It is cultivated in South and South East Asia, Australia, U.S.A. and Africa (Ahmed, 1999). The mungbean is called also mung, moong and green gram in India and mungo in Philippines, grown for its protein-rich edible seeds, it’s prized among the pulse species for its seed are high in protein and easily digested when consumed as food (Poeblman, 1991). In Egypt it’s introduced as a new leguminous crop rich in protein (22-28%) by the Agriculture Research Center. This leguminous crop is an early mature after 70-90 days of cultivation. Mixing mungbean flour with cereal flour produces a complete nutritive diet. The seeds are also utilized in making soup, bread, sweets, salades, nodles, curries and many other products. Mungbean is in favour of the nutrition of children and elderly people because of its easy digestibility. Moreover, this crop needs less amount of water for irrigation and also could be used as a forage crop.
