Abstract

This i n v e s t i g a t i o n was aimed t o study t h e morpholog i c a l , chemical, b a c t e r i o l o g i c a l and organoleptic prop e r t i e s of B o l t i f i s h (Telapia n i l o t i c a ) from t h r e e sources in Kafr El-Sheikh Governorate. The samples were caught from El-Khashaa farm, Drain Ro. 7 and B r o l l u s l a k e . The e f f e c t of t h e d i f f e r e n t t h r e e sources of B o l t i f i s h and a n t i b i o t i c treatments ( o x y t e t r a c y c l i n e , t e t r a c y c l i n e and chlorarnphenicol) on t h e previous p r o p e r t i e s was studied a t zero time and during f r o z e n s t o r a g e a t -20•‹C f o r d i f f - erent periods t o 6 months. The r e s u l t s reveeled t h e following : I- Presh B o l t i f i s h (Telapia n i l o t i c a ) from ~l-Khashaa farm, Drain No. 7 and Brollus l a k e : 1. The morphological p r o p e r t i e s of B o l t i f i s h from t h r e e sources were ranged between 18-26 cm. in l e n g t h , and between 135-220 gm. in weight, 2. The proximate composition of Eolti f i s h f l e s h from t h r e e sources had not remarkable d i f f e r e n c e s in moist u r e , t o t a l s o l i d s , crude p r o t e i n and e t h e r e x t r a c t , while ash content in Drain ?To. 7 showed had t h e highe s t values than t h e other samples. B o l t i f i s h from El-Khashaz farm contained t h e >highest amount (percentage of crude p r o t e i n (88.48%) and ether e x t r a c t (6.74%) and lowest percentage of moisture (78.30%) than t h e others.
