Abstract Pecaut nycoflora, aflatoxin accumulation, and free fatty acids (determined as acid value) production in Egyptian peanut was studied in samples stored at temperatures (10•‹, 20•‹, and 30 OC) and relative humidities (75, 85, and 95 %). Peanuts were divided into two portions, one portion was inoculated with Aspergillus flavus isolate &Ig3, while the other remain un-inoculated. Mycoflora , aflatoxin contents and FFA were determined in kernels and shells initially and then weekly ending with the eight week. Laboratory experiments were carried out to determine the production of aflatoxin in sterilized and nonsterilized peanut samples inoculated with different strains of -A. flavus and incubated at 28 OC. |
