Abstract Legumes and grains are considered the cheapest source of protein available in developing countries for both adults and children. In Egypt major baby foods were imported and high expensive for most of public people. this work was carried out to evaluate the nutritional values of some cereals (wheat, maize and rice flours), legume seeds (broad bean, lentile, lupine, chick pea and fenugreek) and skim milk powder. Lupine seeds were boiled in water for 15 min. The boiled seeds were steeped in running tap water for three days to remove their bitterness. Then dried in an oven. :,Mixtures were obtained by using the same materials and by different levels of cereals and legumes with skim were prepared by using the mixtures obtained, the protein contents were 10% for all diets. All diets prepared and protein free diet, as well as, casein diet as a control were evaluated by some of biological tests, such as protein efficiency ratio (PER), net protein ratio (NPR), net protein utilization (NPU) , biological value (B.V.) and digestibility coefficient (D.C.) by rats test.
