Abstract The study was carried out on stored coconut oil and its heated mixture with soybean oil. The present investigation studied the following points : The preliminary analysis of coconut oil involved the physio-chemical properties i.e. refractive index, iodine value, saponification value, acid value and peroxide value. Storage of coconut oil under laboratory temperature for 5 months at 30 c. The stored oils were evaluated by determination of the chemical properties before and after storage. The results obtained indicated that the acid, peroxide and iodine values of the oil were 0.31, 0.88 and 10.85, respectively before storage, while these values were 0.59, 10.36 and 8.72 after 5 month storage, respectively. These results showed no considerable increase in acid and iodine values during the periods of storage. The properties of stored coconut oil showed that this oil was fixed at normal conditions due to its high stability which return to the low of unsaturation degree and its high content of saturated fatty acids i.e. auric and meristic in the same oil. In fact, by increasing of the storage period for 16 month the oil start to be deteriorated. |
