Abstract

The quality of ready-to-eat meat meale (Kofta) which eaten mostly by the public in Assiut Restaurants were evaluated bacteriologically. This quality evaluation was done by estimation of Aerobic plate count, Enterobacteriaceae, coliforms, Staph.aureus and C.perfringens. Besides isolation and identification of some food poisoning microorganisms.
