Abstract

Environmental pollution is one of the major problems in many parts overall the world.
Heavy metals considered as a main sources of environmental pollution. Several environmental toxins such as lead, cadmium and mercury may be of importance in promoting and accelerating of many disease. Chronic, low level exposure to toxic metals in an increasing global problem. The heavy metals may be reach to our food from a number of sources like air, soil and water. So, the present work study A) the contamination of different types of bread samples (shamey, balady, bran bread) collected from El-Mansoura City and its raw materials with some heavy metals i.e. (Cu, Zn, Pb, Cd and Hg). And effect of milling process of wheat grains on heavy metals contents, B) the contamination of Bolti fish and water samples obtained from different areas (El-Manzalah Lake. Farm from Kafr El- Sheik and Talkha Market). Also study the effect of common cooking methods i.e. (frying - grilling) on heavy metals contents in Bolti fish, C) Biological experiment using fed animal rats with naturally contaminated fish and bread with Pb and Cd, drinking water contain pure Pb and/or Cd with the same limits found in the contaminated fish and bread and the permissible limits as recommended by FAO (1983).
The results showed that: the highest level of Cu, Zn, Pb, Cd and Hg were in bran bread samples, the concentration of heavy metals were depending on the extractions rate, where the higher levels of heavy metals were in wheat flour bran but the lower levels were in wheat flour 72% ext., heavy metals content in water and fish from Kafr El-Sheik farm sample was higher than the water sample from El-Manzalah Lake. In biological experiment Liver and Kidney dysfunction has been observed during experiment, changes in histopathological examination (liver, kidney and brain samples), increase in the level of Malonaldehyde (MDA) and decrease in antioxidant enzymes (SOD) and (GSH) where the high changes were in the groups treated with high limits for Cd and/or Pb when comparing with the control group. The study could be concluded that: The foods and its products must be protected from the contamination by heavy metals especially Cd, Pb because they are highly toxic effect through the caring by processing steps and the handling/marketing.
