Abstract Ras cheese is considered as one of the most widespread and popular vaiety of hard cheese being consumed either in egypt or in some other arab countries. it is usually made either from row or pasteurized cow, buffalo or a mix from both. Although the pasteurized milk-cheese has been proved to be of more uniform properties and of better body and texture. but the flavour intensity does not copare favourably with that made of raw milk. |
