Abstract
The increasing economic importance of food materials together with the complexity of modern technology for their production, handling, storage, processing, preservation, quality evalution and marketing demand a better knowledge of significant physical properties. No doubt that the most apparent benefit of mwchanization is the redution of physical effort. The fact that this is invariably achieved by improved materials handling is less obvious.
