Abstract

The objective of the thesis was to assess the biological activity of pomegranate juice, apricot, and lactic acid fermented dairy products in vitro and in human biological trails. Antimicrobial activity and antioxidative activities were carried out using standard techniques. The biological studies were carried out in the 1st trail. Dairy products (Natural yoghurt, synbiotic yoghurt and fermented sobya). The urinary lactulose mannitol dual test, the fecal short chain fatty acids, and the fecal hydrolytic enzyme activities were assessed baseline and at the end of the three weeks intervention trial. The results showed that the three weeks dietary interventions with regular yogurt or sobya normalized the intestinal barrier function, as indicated by the decreased urinary lactulose/mannitol (L / M) ratios (P < 0.05); the 3 - weeks dietary intervention with synbiotic yoghurt didn’t change significantly mean urinary L / M ratio. The mean urinary antioxidative activities increased only among subjects consuming synbiotic yogurt for three weeks, compared to pre - intervention period (P < 0.05). Similar trend was found after consumption of fermented sobya, but the increase didn’t attain significant level P > 0.05
