Abstract The present study was conducted to evaluate the bacteriological status; Aerobic bacterial count, Coliform and Staph. aureus counts as well as Isolation and identification of Salmonella, Staph. aureus and E. coli true fecal type of forty random samples of imported frozen beef and buffalo meat collected from retail stores while native fresh beef and buffalo meat samples were collected from a slaughterhouse in Cairo governorate (ten samples each). Obtained results revealed that the mean aerobic bacterial counts (cfu/g) were 3.4x10⁵±1.4x10⁴, 4.7x10⁵±2.7x10⁵, 1.3x10⁵±8.7x10⁴ and 3.8x10⁵±1.5x10⁵; Coliform counts (MPN/g) were 2.2x10²±1.1x102, 3.1x10²±1.4x10², 4.3x10²±1.2x10² and 7.8x10²±1.3x10² and Staph. aureus counts (cfu/g) were 4.1x1²±3.9x10², 3.4x10²±1.2x10², 1.5 x10±4.4 and 1.6 x10²±8.3x10 for examined imported frozen beef, native beef, imported frozen buffalo and native buffalo meat samples respectively |
