Abstract

Petroselinum crispum Mill. (family Apiaceae) is widely used as an essential spice due to its health benefits. This study was designed to investigate the volatile constituents and nonvolatile constituents of P. crispum growing in Egypt as well as assess its antioxidant and hepatoprotective activities. The volatile constituents were investigated using GC-MS analysis and the polar constituents were separated and elucidated using chromatographic and spectroscopic techniques. The results exhibited that the GC-MS analysis of the essential oil led to characterize 27 compounds and the chromatographic isolation process led to isolate and identification of 7 pure compounds. In addition, the ethyl acetate and n-butanol fractions had the highest antioxidant activities and the n-butanol fraction had high
hepatoprotective potential
