Abstract

A total of 366 samples of table eggs (pooled samples) including farm, native and organic table egg were collected from Ismailia governorate, (153 for microbiological analysis, 153 for chemical analysis and 60 for experiment). Salmonella was isolated in the egg shell of farm and native eggs, while organic eggs were negative from Salmonella. Salmonella couldn’t be detected in farm, native and organic egg content. Escherichia coli was isolated in the egg shell and the egg content in farm and native eggs samples, while in organic eggs in the egg shell only. The average percentage of lead was 0.010 ± 0.002, 0.019 ± 0.003 and 0.036 ± 0.004 ppm, respectively, while the percentage of cadmium was 0.004 ± 0.001, 0.012 ± 0.001 and 0.016 ± 0.002 ppm, respectively, in farm, native and organic eggs samples. Tetracyclines and Erythromycin cannot be detected from any of the examined table egg samples. Sixty table eggs were collected to study the effect of acetic acid on the total aerobic and staphylococcus count (30 samples of the control group and 30 samples of the acetic acid group). The results showed that the microbial load in the eggshell treated with acetic acid is lower than that of the control group.
