Abstract
The present study aims to the effects of UV-treatment on some bioactive compounds content and biological activities of leafy vegetables. evaluate the efficiency of the UV radiation on the microbial load of the resident microflora of some most commonly leafy vegetables i.e, molokhia, spinach and lettuce when applied before the refrigeration process.
