Abstract

Results of the study showed the following:
Refined oils:
Physico-chemical analysis
The measurement of the mentioned physico-chemical characteristics (Refractive index, Acid Value, Saponification value and Peroxide Value) of soybean; sunflower oils and their blends indicate that all final refining stages of oil samples showed parameters within the recommended values except for sp. gr (0.925- 0.937), which were higher than FAO/WHO recommended values.
Fatty acid composition. The best composition of fatty acids was found in Crude sunflower oil, it contains the highest content of unsaturated fatty acids USFA (89.38%) and the lowest content of saturated fatty acids SFA (10.60 %).
Determination of 3-monochloropropane-1,2-diol esters concentrations
The 3-MCPD concentrations in different refining stages of all investigated oils; sunflower oil (31.7-327 μg/kg), soybean oil (62-130 μg/kg), Soybean Sunflower blend oil_1 (43-1066 μg/kg) and Soybean Sunflower blend oil_2 (46-581 μg/kg) were found to be lower than the maximum allowable concentration limit recommended by Commission Regulation (EU) 2020/1322 for edible oils (1250 μg/kg). The 3-MCPD concentrations detected in different refining stages of investigated oils ordered from the highest to lowest were as follow: soybean oil (Refined soybean oil ˃ Deodorized soybean oil ˃ Bleached soybean oil ˃ Degummed soybean oil ˃ Neutralized soybean oil ), Sunflower Oil (Deodorized sunflower oil ˃ Polished sunflower oil ˃ Crude sunflower oil ˃ Degummed sunflower oil ˃ Bleached sunflower oil ˃ Neutralized sunflower oil). Soybean Sunflower blend oil_1 (Deodorized blend oil ˃ Neutralized blend oil ˃ Crude sunflower oil ˃ Bleached blend oil ˃ crude soybean oil ), and soybean sunflower blend Oil_2 oil (refined blend oil ˃ Deodorized blend oil ˃ Crude sunflower oil ˃ Bleached sunflower oil ˃ crude soybean oil ˃ Degummed blend oil).
The highest concentration was found in deodorized blend oil_1 (1066 μg/kg) flowed by Refined blend oil_2 (580 μg/kg) then by Deodorized sunflower oil (399 μg/kg) and the lowest concentration was found in neutralized sunflower oil (31.7 μg/kg) followed by Bleached sunflower oil (35 μg/kg) then by Degummed sunflower oil (38.5 μg/kg). Refined and deodorization stages of all investigated oils sunflower, soybean, blend oil_1 and blend oil_2 oils showed higher (2–24 times) concentrations of 3-MCPD compared to unprocessed oils (all with 3-MCPD ester levels under 136 μg/kg)
