Abstract

Meat is an important foodstuff and one of the most expensive components of human nutrition; therefore a total of 100 imported frozen boneless beef meat of different cuts (50 of Brazilian imported frozen meat and 50 of Sudanese imported frozen meat) were collected from Luxor city supermarkets. The samples were transferred directly to the laboratory, where they were examined organoleptically and chemically for determination of nutritional compositions.
Nine characteristics point test as were given to panelists from dislike extremely to like extremely was applied. Panelists considered the above points for evaluation of color, odor, flavor and consistency of the meat samples. Color of meat indicated 7.92 mean point (like very much) for Brazilian imported frozen meat samples and 8.24 mean point (like extremely) for Sudanese imported frozen meat samples. Odor of meat indicated 7.78 mean point (like very much) for Brazilian samples and 7.60 mean point (like very much) for Sudanese imported frozen meat samples. Consistency of meat indicated 7.08 mean point (like very much) for Brazilian samples and 7.36 mean point (like very much) for Sudanese samples.
Sensory values (color and consistency) were insignificantly better in Sudanese imported frozen meat samples as compared in Brazilian imported frozen beef meat samples. While odor was slightly better in Brazilian than Sudanese samples.
The chemical examination of pH indicated that 96% of Brazilian imported frozen meat samples were within the permissible limits, but all of Sudanese samples were within the Egyptian permissible limits set by ESS, 2005. Chemical examination of total volatile nitrogen (TVBN) indicated that 14% of Brazilian samples, and 44% of Sudanes samples were within the Egyptian permissible limits. Analysis of thiobarbituric
acid (TBA) indicated 64% of Brazilian samples, and 86% of Sudanese samples were within the Egyptian permissible limit.
The chemical examination revealed that, the moisture, protein, ash and fat content of the Brazilian imported frozen meat averaged 71.96, 22.80, 0.65and 2.01, respectively, while moisture, protein, ash and fat content of the Sudanese imported frozen meat averaged 69.8471, 22.93, 0.63and 2.52, respectively. from the result, the moisture and ash values of Brazilian imported frozen meat higher than Sudanese samples. On the other hand, the values of protein and fat higher in Sudanese samples than Brazilian samples .There were no significant difference between moisture, fat, protein and ash level of Brazilian and Sudanese imported frozen meat. But the pH, TVBN and TBA levels were significantly differed between them.
