Abstract Wheat is a major source of carbohydrates and protein in human diets and with approximately 649.3, 695.7, 667.7, 711.1 and 728.9 million ton has harvested worldwide; in 2010, 2011, 2012, 2013 and 2014 respectively. In Egypt was 7.1, 8.4, 8.8 and 9.3 million ton has harvested in 2010, 2011, 2012, 2013 and 2014, respectively (FAO, 2014). Cereal-based foods have vital importance in human diet. Bread is a basic cereal food, which is an important source of carbohydrates, and as a consequence takes an important place in the recommended daily calorie intake (Dogan and Kücüköner, 1998). |
