Abstract

In this study, 240 samples were collected from El-Sharkia Governorate. The collected samples included different parts of chicken carcasses (breast, thigh, liver, and gizzard) of different statuses (fresh, chilled and frozen). The identification of S. aureus and E. coli was performed using the cultivation on differential and selective medium (BPA and EMB) and biochemical tests including gelatin hydrolysis, motility, Hydrogen sulfide production, urease, catalase and coagulase, Also, indole, citrate, MR, VP tests.
The collected chicken meat samples from El-Sharkia Governorate cities were subjected to the bacteriological quality examination by estimate the total count of S.aureus and E. coli.
Out of 240 samples, 65 samples represented 27.08% of the total samples were positive for the presence of S. aureus and 86 samples represented 35.83% of the total samples were positive for the presence of E. coli.
The high incidence of S.aureus (31.7%) was found in the samples that were collected from the 10th of Ramadan, Fakous and Derb Negm. However, The high incidence of E. coli was 41.7% at the samples collected from Fakous city.
Overall obtained data, the incidence of S.aureus and E. coli were higher in all collected fresh cuts-up samples and showed a lower incidence in all frozen samples. The highest incidence of bacterial isolates was observed in Fakous city than in other cities. However, El-Husainia city reflected the lowest incidence for S.aureus and E. coli.
