Abstract Nutrition is one of several important modifiable factors for optimal bone health and prevention of osteoporosis. Indeed, the role of calcium and vitamin D in improving bone mineral density (BMD) and reducing fracture risk has been well established. In addition, studies have shown that diets high in vegetables have positive effects on bone mineral status and that nutrients and vitamins, including vitamin K, vitamin C, phosphorus, potassium, magnesium, protein, and sodium are important for the maintenance ofoptimal bone health. This studywas conducted to investigate the chemical composition and minerals content of vegetables such as (broccoli, carrots, mushrooms and red cabbage). As well, study the effect of the vegetables mixture (broccoli, carrots, mushrooms and red cabbage) at different concentrations (10 and 20%) on Female rats groups in menopause for reduce the risk of osteoporosis. Also, some biological evaluation was carried out by determination ofBWG, FI,FER and organs weight (liver, kidney,heart, ovarys and north thigh).Also, some biochemical analisis were determined such as CHO, TG , HDL-c , PTH,calcitonin, ALP, E2, Ca, p, TAC, SOD and MDA. At the end of experimental. The work was carried out at the animal house of National Research center, Cairo. Sixty Female rats weighing (210± 10 g) aged (18-20 month old) and 6 young adult female rats (3 month old) weighing (120 ± 10 g) were fed a standard diet for 7 day as an adaptation period. After adaptation period, rats were divided into two main groups as follows:The first main group was young rats fed on basal diet (BD) as a young control group (-ve) and the second main groups were menopausal rats, one of them was control group (+ve) (group2), the remained groups as follows: |
