Abstract ThepresentstudywascarriedouttodeterminetheprevalenceofsomepsychrotrophicbacteriainchickenmeatandgibletsretailedinAssiutGovernorate.Atotalof120randomsamplesofrawchilledchickencutsandchickengibletswerecollectedfromdifferentretailshopsinAssiutcity.Chilledchickencutsconsistedof:chickenbreastfillet,chickenthighandchickenwings(20foreach)while,chilledchickengibletsincluded:chickenlivers,chickenheartsandchickengizzards(20foreach). 1. Determinationofpsychrotrophiccount: Psychrotrophicbacteriawereexistedinallexaminedchilledchickencutsandgibletssampleswithmeanvaluesof 6.19and6.53logcfu/g,respectively. Withregardtochickencuts,themeanpsychrotrophiccountsofbreastfillet,thighandwingsampleswere5.7,6.43,6.44logcfu/g,respectively.Thebreastfilletappearedlesscontaminatedwithpsychrotrophsthanthigh,wing,liverandgizzardsamplesanditwassignificantlydifferent(P=0.019). Themeanpsychrotrophiccountsofchickengiblets;liver,heartandgizzardwere6.77,6.26,6.55logcfu/g,respectivelyandtheywerenotsignificantlydifferent(P>0.05). OnthebasisofICMSF(ICMSF,1986),70%oftotalexaminedchickencuts,55%ofbreastfillet,75%ofthighand80%ofwingsampleswereregardedasunacceptablequality.Also,71.7%oftheexaminedgibletswereconsideredunacceptable.Furthermore,therewere80%,65%,70%oftheexaminedchickenliver,heartandgizzardsampleswereofunacceptablequality,respectively. 2. DeterminationofPseudomonasspp.count: Accordingtotheresults,Pseudomonasspp.existedin85%ofexaminedchilledchickencutssampleswithameanvalueof3.06logcfu/g.Withregardtochilledbreastfillet,thighandwingsamples,Pseudomonasspp.contaminationrateswere75,80,100%,theirmeancountswere2.27,3.4and3.5logcfu/g,respectively.TheresultsshowedthatallchickenwingscontaminatedwithPseudomonasspp.withthehighestmeancount. Pseudomonasspp.existedin93.3% ofexaminedchilledgibletsameanvalueof 3.54logcfu/g.Withregardtochickenliver,heartandgizzardsamplestheirPseudomonasspp.contaminationrateswere95,95,90%,theirmeanPseudomonasspp. countswere3.61, 3.4, 3.54logcfu/grespectively. ThebreastfilletappearedlesscontaminatedwithPseudomonasspp.thanothertypesof samplesand itwashighlysignificantlydifferent(P=0.006). AccordingtoPseudomonasspp.count,5%oftotalexaminedchickencuts,5%ofthighsamplesand10%ofwingswereofunacceptablequalityandallthebreastfilletsampleswereadequateforconsumption.Also,5%oftotalexaminedchickengiblets;liver,gizzardandheartwereof unacceptablequality. 3. Incidence of somepsychrotrophicfoodpoisoningmicroorganisms: A) Listeriamonocytogenes: TheincidenceofL.monocytogenesintheexaminedchickencutssampleswas5%.TheresultsdeclaredthatbreastfilletsampleswerethemostcontaminatedbyL.monocytogeneswithapercentageof10%followedbythigh(5%)andcouldn’tbedetectedfromwingsamples.Ontheotherhand, theincidenceofL.monocytogenesinexaminedgibletswas6.7%,wherethecontaminationrateswere10%forgizzardsand5%foreachheartandliversamples. B)Yersiniaenterocolitica: Yersiniaenterocoliticawererecoveredfrom6.7%and11.7%oftheexaminedchilledchickencutsandgibletssamples,respectively.TheresultsdeclaredthatthighsampleswerethemostcontaminatedbyY.enterocoliticawithapercentageof10%followedbybreastfilletandwing samples (5%) foreach. RegardingtotheincidenceofY.enterocoliticaoftheexaminedchickengiblets,thisstudyrevealedthatthehighestcontaminationrecordedinliversamples(20%)followedbygizzards(15%) andcouldn’tbedetectedinhearts. |
