Abstract

Summary
Food contamination is a public health problem that is monitored worldwide by the Food and Agriculture Organization of the United Nations and by the World Health Organization. Care in food preparation and storage are extremely important to avoid ingestion of various microorganisms and their toxins .Aflatoxins (AFT) are secondary metabolites produced by some Aspergillus species that contaminate food during storage, production and processing. Due to their high toxicity and mutagenic, teratogenic and carcinogenic effects, they have long been suggested as possible etiologic agent of HCC. Aflatoxin is specifically target the liver organ.
This study is carried out to determine Aflatoxin in food stuffs that may be the cause of the cancer Liver.
To fulfill the goals of this target, 90 participants were divided into 3 groups:
group (1): 30 persons do not suffer any liver diseases (control).
group (2): 30 persons are suffering from hepatocellular carcinoma (HCC).
group (3): 30 persons are suffering from liver diseases (HI).
This study used 24 h recall and food frequency questionnaire for these groups to determination the type and amount of food which were intake. Then random samples were obtained of some foods (chicken egg; chicken, duck and rabbit liver) purchased from local market in Assuit;
which determined total amount of aflatoxins using high-performance liquid chromatography (HPLC) instrumental.
The following parameters are studied:
1- Liver functions tests.
2- MDA, GPx
3- Aflatoxin albumin adduct by ELISA.
The results obtained from this study were:
1- There were significant difference between different groups about age (P<0.000), also there were moderate significant difference (P<0.001) between groups in relation to sex with higher in male percentage than female in study groups than control group.
2- Eggs Samples was recorded negative results for all aflatoxins types. Liver samples recorded high level of B1, B2, G1, and G2.
3- There was high significant difference (p<0.000) about chicken liver intake between different groups, also there was significant difference (P<0.05) between different groups for duck liver intake. But nonsignificant difference for rabbit liver (P>0.05).
4- There was a high significant difference (P<0.000) between different groups in each of AST, ALB and TB and there was moderate significant difference (P<0.001) in each of ALT, Bilirubin.
5- There was a high significant difference between different groups (P<0.000***) for Glutathione and Aflatoxin as regard there was high significant difference (P<0.000) between control group and HCC & (HI) group. Also there was moderate significant difference (P<0.001)and between control group and HCC & (HI) group.
6- This study found that all patients of HCC had high amounts of aflatoxin albuimn adduct in their serum than control group .
7- There are negative correlation between HCC, MDA, GPx and amount of aflatoxin in blood and positive correlation between HCC,ALT, AST and amount of aflatoxin in blood.
