Abstract A total of 140 random samples of basterma, luncheon, sausage and minced meat, (35 of each) were collected from different markets in Port Said governorate. These samples were subjected to mycological examination for isolation and identification of different mould species as well as total mould colony count. The total mould colony count /g from sausage samples was the highest one then minced meat, basterma and luncheon. Total moulds count/g in sausage ranged from 9x1 0 to 3.4x1 04 with a mean count of 6.9x102±1.2x102cfu/g, while the total mould count in minced meat samples ranged from1x1 0 to8.8x1 02 with a mean count of 2.8x102±4.3x10cfu /g, in basterma the total mould count ranged from 1x1 0 to 6x102 with a mean count of 2.4x102±2.7x10 and the total mould count in luncheon samples ranged< from 1x10 to 3.5x102 with a mean count of 1.3x102±2.1x10. |
