Abstract

A total of 60 samples of imported frozen Brush tooth lizard
fish, Mackerel fish and Horse mackerel fish (20 of each) were
collected from different fish marckets at Sharkia Governorate for
organoleptic examination, physicochemical examination and
heavy metals determination of such fishes.
A- Organoleptic examination of fish samples:
All samples of examined Mackerel and Horse mackerel
fish were fit for human consumption, but 87.5% of Brush tooth
lizard fish were fit for human consumption and 12.5% were in
the border line.
B-Fish quality parameters:
1-pH:
The mean values of pH in Brush tooth Lizard fish,
Mackerel and Horse mackerel fish ranged from 6.48 to 7.19,
6.23 to 6.50 and 6.79 to 7.10 with mean values of 6.99 ± 0.047,
6.4 ± 0.033 and 6.97 ± 0.035, respectively. These values in
Brush tooth Lizard fish and Horse mackerel fish were higher
than the permissible limit (≤ 6.5) (EOS, 2009).
2-TVB-N:
The mean values of TVB-N in Brush tooth lizard fish,
Mackerel fish and Horse mackerel fish was 50.82 ± 2.14, 20.16
± 0.56 and 22.68 ± 2.14 mg/100gm with an average of 44.1:63,
18.9:23.1 and 12.6:29.4 mg/100gm, respectively. The results in
Mackerel and Horse mackerel fish were within the maximum.
