Abstract

This study was conducted to Study the chemical composition and mineral contents of flaxseeds and some active compounds such as total phenols, total flavonoids , DPPH and TEAC of flax seeds. Utilization of flaxseeds as a natural source of anti oxidant in making some products Production of pattie and tahena using different concentration of flaxseeds (5,10,15,20%). sensory evaluation will do to select best concentration The obtained results could be summarized in the following: 1-Chemical composition of flax seeds: 1-Moisture, protein, fat, fiber, ash, carbohydrates and energy value contents of flaxseeds as dry weight (d/W) were 6.50, 24.40, 35.12, 3.15, 2.63, 28.20 % and 526.48 Kcal/100g, respectively. 2-Chemical composition of sesame seeds: 1- Moisture, protein, fat, ash, fiber, carbohydrates and energy value contents of flaxseeds as Wet weight (W/W) were 5. 60, 22.60, 50.14, 4.60, 4.81, 12.25 % and 590.66 Kcal/100g, respectively. 3-Mineral contents of flax seeds: 1- The highest mineral contents of flax seeds recorded for potassium , phosphorus and magnesium The values were 830.12, 620.00 and 429.80mg/100g, respectively. 2- The lowest value recorded for copper, manganese and zinc. The Data also, indicated that flaxseeds contained moderate amounts of mineral contents such as calcium, sodium and iron . The values were 234.15, 28.40, and 5.20 mg/100g, respectively. values were 1.13, 3.41 and 4.35 mg/100g, respectively.
