Abstract

The present study carried out in a trial to open up new horizons for the use of GA in some therapeutic nutrition applications through production of some functional foods using gum arabic to ameliorate the complications arising from kidney disease in rats. Data indicated that with increasing the addition of GA up to 4%, the value of moisture, total protein, crude fat and carbohydrates in the bread samples were not significant decreasing in comparison with the control sample. Crude fiber and ash contents were recorded the opposite direction. The influence of GA on the rheological properties of the wheat flour dough, which are important during its processing indicated that . The results reveal that the addition of GA induced significant (P≤0.05) improvements in farinograpg properties (dough development time, stability and farinograph quality number) and extensograph measurements (Dough strength and resistance to extension). Biological experiments data, indicated that nephrotoxicity induced a significant increased (p≤0.05) liver (AST , 33.25% and ALT, 31.47%) and kidney functions (uric acid, 17.12% and creatinine, 17.65%) functions in compared to normal controls. Replacement of wheat flour with GA by 1 to 4% induced a significant (p≤0.05) decreasing on liver enzymes activities and kidney functions parameters level. The higher effects in manipulation of the liver and kidney functions disorders induced by Nephrotoxicity in rats were increased by the increasing of GA concentration from 1 to 4%. Data recommended to pay attention in the future to carry out more and more research in the area of GA and extended its applications in human diets, industrial and medical applications such kidney diseases patients instead of the chemical used which have induced healthy hazards and side effects for the human being.
