Abstract Fish is one of the most preferable human food due to a high nutritive value and palatable taste; but also fish play a role in transmission of many parasitic diseases when fish eaten raw or in sufficiently cooked. So, this study was carried out to clarify the role of some freshwater and marine fish in transmitting some parasites to human as well as to study the effect of some food processing methods on the viability of encysted metacercariae of trematodes. A total of 268 fish samples including fresh water fish as Nile tilapia (Oreochromis niloticus, 68) and marine fish including (Mugil cephalus, 50), Mediterranean sand smelt (marine Atherina spp., 100) and sardine (Sardinella aurita, 50) were collected from fish markets at Diarb-Negm, Sharkia province; while samples of mullet were collected from El-Manzala markets during the period of October, 2016 to February 2017. All fish samples were examined microscopically with artificial tissue digestion and compression technique. The study revealed the following results:- I. Incidence and distribution of encysted metacercariae of public health importance in Nile tilapia and mullet. The overall incidence of encysted metacercariae in Nile tilapia (O. niloticus) was 82.3%. Also, the infection rates of Nile tilapia with trematode metacercariae was 44.1% in muscles only; 23.5% in viscera only, in 14.7% in both viscera & muscles; while the gills of Nile tilapia were negative for any encysted metacercariae.
