Abstract Cancer is thought to result from the accumulation of multiple genetic aberrations that transform cells, which allows for their abnormal growth, proliferation, and metastasis. Carcinogenesis is caused by mutation and mutation of the genetic material of normal cells. Previous studies have reported that the risk of gastric cancer increases by consumption of salty foods and N-nitroso compounds and a low intake of fresh fruits and vegetables and inflammation. N-methyl-N-nitrosourea (MNU) is a mutagen and genotoxic substance, which is a potent inducer of cellular stress leading to chromosomal aberrations, point mutations, cell death, and DNA damage. |
