Abstract

Chicken edible giblets (liver, gizzard and heart) occupy a unique place in human diet due to its specific nutritional and digestible value. It is an excellent source of vitamins and protein of a high biological value in addition to be easily prepared and cooked. Furthermore, chicken giblets are very popular among children due to its palatability and easily handling. However, during processing, storage and transportation chicken carcasses are unavoidably exposed to bacterial contamination that may cause food poisoning and diseases to the consumers. A total of 60 random samples (30 of each of fresh and frozen chicken giblet samples including (10 of each) liver, gizzard and heart were collected from different localities of poultry slaughter houses or retail shops at Sharkia Governorate, Egypt. The collected samples were subjected to organoleptic and bacteriological examinations. A- Organoleptic examination: The results revealed that 100% of the examined fresh and frozen chicken giblet samples showed a normal color, odour, consistency and taste B- Bacteriological examination: (1) Most probable number (MPN) of coliforms: The results revealed that the most probable number of coliforms (MPN) was higher in the fresh samples than the frozen one especially.
