Abstract

A total of 100 random samples of street vended meat meals represented by Hawawshi, liver sandwiches, mixed offals and shawerma (25 of each) were collected different street vendors during the period extended from January to March 2016 from Alexandria Province. Each sample (represented by one sandwich) was kept in separate sterile plastic bags and transferred directly with a minimum of delay to the laboratory of Food Hygiene Department, Faculty of Veterinary Medicine, Alexandria University in an insulating refrigerated container under possible aseptic condition to avoid any changes in the quality of the samples. Samples were subjected to microbiological examination immediately after arrival to the laboratory for determination of aerobic plate count, Enterobacteriaceae count, Coliforms count, Staphylococcicount, mould and yeast count. In addition, isolation and identification of E. coli were attempted.
The obtained results revealed that:
• The mean values of aerobic plate count of Hawawshi, liver sandwiches, mixed offals and shawerma were 8.9×105±1.1×105, 5.2×105±1.3×105, 7.2×105±1.2×105 and5.4×105±1.2×105cfu/g, respectively.
• According to the limits proposed by the Egyptian Standards (The aerobic plate count of street vended meat meals must not exceed 104), it was noticed that all of the examined samples failed to comply with the standard limits.
• The mean values of Enterobacteriaceaecount of Hawawshi, liver sandwiches, mixed offals and shawerma were 1.2×104± 1.7×103, 1.9×104± 2.6×103, 2.1×104± 4.8×103 and 6.3×104 ±5.2 ×103 cfu/g, respectively.
• According to the limits proposed by the Egyptian Standards (There is no permissible limit for Enterobacteriaceae), it was noticed that all of the examined samples failed to comply with the standard limits.
• The mean values ofColiform count of Hawawshi, liver sandwiches, mixed offals and shawerma were 9.2×102± 1.1×102, 6.8×102± 1.4×102, 8.3×102± 1.6×102 and 8.6×102 ± 1.3×102 cfu/g, respectively.
• All of the examined samples exceeded the permissible limit of coliforms count according to the Egyptian Standards (Count must not exceed 102 cfu/g).
• The incidence of E. coli isolated from Hawawshi, liver sandwiches, mixed offals and shawerma was 24, 32, 36 and 28%, respectively.
• The serological identification of the obtained isolates of E. colifrom the examined samples of street vended meat meals clarified that:
o E. coliO86:k61 (Enteropathogenic strain) was detected at the rate of 8, 4, 8 and 8 % in the examined samples of Hawawshi, liver sandwiches, mixed offals and shawerma, respectively.
o E. coliO26:k60(Enterohaemorrhagic strain) was detected at the rate of 0, 12, 8 and 4 % in the examined samples of Hawawshi, liver sandwiches, mixed offals and shawerma, respectively.
o E. coliO126:k71(Enterotoxigenic strain) was detected at the rate of 8, 8, 8 and 4 % in the examined samples of Hawawshi, liver sandwiches, mixed offals and shawerma, respectively.
o E. coliO124:k72 (Enteroinvasive strain) was detected at the rate of 4, 0, 8 and 4 % in the examined samples of Hawawshi, liver sandwiches, mixed offals and shawerma, respectively.
o E. coliO119:k69 (Enteropathogenic strain) was detected at the rate of 4, 8, 4 and 8 % in the examined samples of Hawawshi, liver sandwiches, mixed offals and shawerma, respectively.
• The mean values ofStaphylococci count of Hawawshi, liver sandwiches, mixed offals and shawerma were 1.1×104± 8.2×103, 1.6×104± 6.7×103, 2.1×104± 5.4×103and 1.2×104± 6.4×103cfu/g, respectively.
• According to the limits proposed by the Egyptian Standards (Staphylococci count must be zero), it was noticed that all of the examined samples failed to comply with the standard limits.
• The mean values ofmouldcount of Hawawshi, liver sandwiches, mixed offals and shawerma were6.1×102±1.1×102, 7.2×102±1.3×102, 7.9×102±1.4×102and 9.2×102±1.4×102cfu/g, respectively.
• According to the limits proposed by the Egyptian Standards (mould count must be zero), it was noticed that all of the examined samples failed to comply with the standard limits.
• The mean values ofyeastcount of Hawawshi, liver sandwiches, mixed offals and shawerma were1.1×103±4.1×102,1.6×103±3.8×102,1.4×103±4.2×102and 1.3×103±4.2×102cfu/g, respectively.
• According to the limits proposed by the Egyptian Standards (yeast count must be zero), it was noticed that all of the examined samples failed to comply with the standard limits.
