The agriculture industry is a main pillar in developing slain, which contribute a large share of national income that counts the majority of the population, as it is based as well as supplying the National Savin food and the outcome of the foreign exchange needed for economic development. So, it is considered agricultural income from practicing agricultural activities the main components of national income of Egypt. This research aims to shed light on the evolution of the production of red meat from different sources and quantities consumed them on the national level for the period (1998-2013). This study is based on both of descriptive and quantitative economic analysis in the data analysis. So, the study also basic data derived from the reality of published and unpublished data from different sources. As evident from the study that the relative importance of the average quantities produced for each of beef and buffalo, sheep, goats and camels amounted to about 42.32%, 40.93%, 9.25%, 6.41 % during the period (1998-2013), respectively, in the while showing that the net weight of each of the cows, buffalo, sheep, goats and camels stood in the first year in 1998 to about 33.38 %, 49.55%, 9.18%, 6.47%, 1.03%, respectively. While it was about 45.08%, 40.31%, 7.88%, 1.24% in 2013 and, respectively, too. It turns out that there is an increase in the per capita consumption of this type during the period (1998 - 2013) where he estimated at 12.95 kg in the first year of the study to about 15.51 kg in the last year 2013, representing approximately 19.77 % of the base year 1998, as much as the average per capita about 14.75 kg during the period from 1998 to 2013. It is expected that per capita meat that reaches approximately 17.78 kg. It emerged from estimating demand function current prices for red meat for the period (1998 - 2013) found that the most influential factor on the per capita red meat is the amount of imports of red meat, as it increased the amount of imports of red meat results in increased per capita and that the relationship that bound together are a direct correlation, the total flexibility of the model by about 0.235, with a positive value.
While the demand function in real terms estimated she stated that the most important variables namely per capita red meat is the amount of red meat imports and its impact extrusive, while it turns out that the overall flexibility of the demand function was estimated at 0.230, with a positive value, too. The study also predicted the arrival of the quantities produced from cows and goats in the Sohag governorate in 2020 to about 30.87, 0.514 thousand tons, respectively. Estimating productivity function according to the weight of the existing animal farms sample demonstrates for the category possessory first type bovine it found that the most important factors on the final weight of the animal after fattening is the age of the animal at the beginning of fattening.
