Abstract

Food safety risk management (FSRM) is a system recognized as a
worldwide guideline for controlling food borne safety hazards. Nevertheless,
the availability of a diagnostic instrument to assess the performance and
effectiveness of the FSRM is rather restricted; therefore, the food sector
needs an instrument to measure the effectiveness of FSMS.
The aim of this study is to measure the effectiveness of (FSRM) in
selected hotels in Luxor and Aswan in order to identify current issues and
future trends in the hotel industry. Two hundred fifty questionnaires were
distributed to the heads of department and supervisors in three star hotels in
Luxor and Aswan, two hundred thirty were fully completed and returned, and
twelve-document inspection were done by the researcher,the questionnaires
elicited information on the concept of FSRM and barriers hindering
implementation the FSRM and factors that motivate three star hotels to
implement of FSRMS.
The study revealed that the respo ndents are aware of the concept of
FSRM only just 9.5% of the respondents are aware of food safety risk
management concept, the study indicated that the main barriers for the
implementation of FSRM in three star hotels in Luxor and Aswan enough
include the lack of a high skill team, lack of training and qualification of
manpower, resignation of some workers, give priority to profit compared to
the healthy side by management, implementation of the program may require
a costly devices, very complex and expensive system needs a long time to
implement. The study also showed that the main goals and motives for the
implementation the FSRMS are lack of fines and compensation, lack of
customer complaints, not to withdraw licenses temporarily from the hotel,
affect the hotel’s reputation, improving employee performance, reduce the

cost of production in the hotel, increase market share, it is a competitive
advantage for hotel and boost the morale of employees
