Abstract

This work was carried out for identification and studying bacterial contamination of imported frozen meat from different origins like (Brazil, Australia and India). A total of 100 random samples of imported frozen meat were collected from different shops and supermarkets in Alexandria Governorate. The collected samples were examined bacteriologically and the results were: 1- Total Aerobic Bacterial Count ranged from 3.2 X 102 to 8.9 X 106 cfu/g with a mean value of 8.5 X 105-+ 1.8 X 105. 2- Total Psychrotrophic Bacterial Count ranged from 9.9 X 102 to 4.2 X 106 cfu/g with a mean value of 3.7 X 105-+ 7.9 X 104.3- Total Enterobacteriaceae Bacterial Count ranged from 3.3 X 102 to 2.1 X 105 cfu/g with a mean value of 1.6 X 104-+ 2.7 X 103. 4- Total Coliforms Bacterial Count ranged from 1 X 104 to 5.1 X 104 cfu/g with a mean value of 6 X 103-+ 7.3 X 102. 5- Total Staph.aureus Count ranged from 1 X 102 to 8 X 104 cfu/g with a mean value of 8.3 X 103-+ 1.6 X 103. 6- Salmonellae was isolated from 30% of examined imported frozen meat samples.7- E.coli was isolated from 15% of examined imported frozen meat samples. The present results declared that 85% of imported frozen meat samples had Staph.aureus count exceeding the permissible limits according to the Egyptian Standards (E.S) (1991) No.1522. The public health significance and importance of different bacterial count, as well as incidence of some microorganisms, were discussed. Also, suggestive measures for improving the quality of imported meat were discussed.
