Abstract

Some glycosidic enzymes were qualitatively and quantitatively screened in seven species of the seeds and some vegetative parts of Cruciferous family (Brassicaceae). Extraction and purification of myrosinase, B-amylase and disaccharidase enzymes from radish (Raphanus sativus) roots, which were the most considerable producer in the screened plants, was performed. The amount of the purified myrosinase and B-amylase enzymes were 5.83 mg (715 units) and 3.1 mg (2543 units) from 1 kg of fresh radish roots respectively. The physicochemical properties of the myrosinase and B-amylase were extensively investigated. Proteins, oils, glucosinolates and phytic acid contents in screened Cruciferous meals were estimated.
