Abstract
أجريت هذه الدراسة علي البيض الحيوي في السوق المصري بهدف تقييم الخواص الطبيعيه والمحتوي الميكروبي وقد اظهرت الدراسه ان نسبه القشره المتسخه ؛القشره الخشنه؛ والقشره زات الرائحه الكريهة هي 45%؛ 9%؛ 4.5%. كما اوضحت الدراسه ان متوسط العدد الكلى لكل من البكتريا الهوائية وبكتيريا القولون المعوى والميكروب المكور العنقودى هي 1٫6×610 ± 3٫2×510و3٫9× 410± 3٫9×310 و5٫8×510 ± 4٫8×410 للقشره الخارجيه بينما كان متوسط العد الكلي لنفس الميكروبات في محتوي البيض كالتالي 2٫7×310± 4× 210 و 8٫1×10± 1٫5×10 و8٫5 ×210± 1٫6×10 كما تم عزل كل من ميكروب المكور العنقودى الذهبي وميكروب السالمونيلا من 7% و1٫5% من عينات القشره الخارجيه. هذا وقد تم مناقشه الاهميه الاقتصاديه والصحيه لوجود هذه الميكروبات في البيض الحيوي.
A study on 200 organic eggs samples from Egyptian markets was conducted in order to evaluate the safety and quality of the organic hens egg. The study revealed that 45% 0f the examined organic eggs had dirty shell, 9% Rough shell and 4.5% of bad odours. The microbiological examination showed that the average total aerobic bacterial, total coliforms and total staphylococcus count of shell were 1.6x106 ± 3.2x105, 3.9x 104 ± 3.9x103and 5.8x105 ± 4.8x104, respectively. While the average total aerobic bacterial, total coliforms and total staphylococcus counts of egg content samples were 2.7x 103± 4x102, 8.1x10± 1.5x 10 and 8.5x102± 1.6x10, respectively. Staphylococcus aureus and salmonellae were isolated from 7% and 1.5% of the examined egg shell samples. Concerning to the average cholesterol concentration in the examined organic eggs were 11.8 + 0.6 mg/g. Also tilmicosin and oxytetracycline residue were detected in 45% and 85% of the examined organic egg samples.
