Abstract

The term heavy metals is often used to describe a toxic element. In the chemical sense, the term refers to detection of metal impurities in foods and food chemicals by certain precipitation reactions. Heavy metals may arise from natural geological sources or human activities (industrial, mining and agricultural). The vast majority of toxic metals fall into the category of environmental contaminants and produce sever disability in humans. IV) Detection of heavy metal residues in fish meat:Different fish species (10 types) from each(10 samples) were collected from Egypt These samples were mainly harvested from Zagazig markets The samples were collected in polyethylene bags, all of which were kept in ice box and transferred immediately to the Meat Hygiene laboratory, Faculty of Veterinary Medicine, Zagazig University. The samples were then analyzed to estimate the level of Cd, Pb, As, Cu and Hg by Atomic Absorption Spectrometry (AAS).V) Reduction of heavy metal residues in Cat fish(Claris lazera):A) Total 5 samples from each 5 groups randomly were collected from Zagazig markets in polyethylene bags and transferred immediately to the Meat Hygiene laboratory, Faculty of Veterinary Medicine, Zagazig University .Each sample was divided into (5 groups) total weight (141gm) . four treated group from 5 groups each of them weight (35gm) and their length with average (10cm) and thickness (1cm) but controlled group its weight was 1gm.
