Abstract

The present investigation was designed to study the total mould counts in a total of 100 samples represented by chicken luncheon, chicken burger, coated chicken fillet, chicken Fillet and chicken Liver (20 of each) which were collected from different localities of different sanitation levels at Zagazig City under different trade names.
Isolation and identification of existed mould genera as well as detection of total aflatoxin and differet types of aflatoxin residues (AFB1, AFG1, AFB2, AFG2) in some examined samples. The results revealed that the mould could be detected in (11) 55%, (14) 70%, (13) 65%, (15) 75% and (16) 80% in examined chicken luncheon, chicken burger, coated chicken fillet, chicken fillet and chicken liver, respectively. The obtained results also showed that chicken liver samples had the highest mould count (6.25 x 102 ± 1.85 x 102 ) followed by chicken burger samples (3.78 x 102 ± 1.14 x 102 ), then coated chicken fillet samples(2.34 ×102 ± 0.78 ×102 ), fillet (2.19 ×102 ± 0.43 ×102) and finally chicken luncheon (2.01 ×102 ± 0.53 ×102 ).
The obtained results showed also that Aspergillus; Pencillium; Alternaria; Cladosporium; Rhizopus; Acremonium and Pacilomyces could be isolated from 8(40%); 3 (15%); 2 (10%); 4 (20%); 3 (15%); 2 (10%) and 1(5%), respectively of chicken luncheon samples. Aspergillus; Pencillium; Cladosporium; Rhizopus; Aurobasidium and Absidia could be isolated from 11 (55%); 5 (25%); 3 (15%); 2 (10%); 2 (10%).
