Abstract Milk is a nutritious food for human which plays an important role in daily diet all over the world. It is also a good medium for growth of a wide range of microorganisms especially the pathogens. The presence of such organisms in milk represents a major public health concern. This study aims to:-1- Study chemical, microbiological quality of raw milk in Gharbiya Governorate.2- Collected raw milk from different distorts at local markets in Tanta and the other cities in Gharbiya Governorate 3- assess the conformance with the Egyptian standards. The results achieved in this work can be summarized as follow: 1- Chemical examination 1.1- The Total solids (T.S) value: The total solids (T.S) in examined cow milk samples collected during summer and winter seasons. During summer ,T.S with a mean value 10.65±1.30%. While during winter, T.S value % with a mean value 12.06±1.84%. T.S in examined buffalo milk samples collected during summer and winter seasons. In summer, The T.S with a mean value 13.20±1.13%. While during winter, The T.S with a mean value 14.48±1.38%. |
