Abstract

Several scientific evidences highlighted that incorrect
dietary choices combined to modern lifestyle can cause chronic
metabolic imbalances that lead to a series of diseases, such as
cardiovascular diseases, obesity, type 2 diabetes, osteoporosis,
various inflammatory diseases and types of cancer. On the other
hand, the relevance of human nutrition in the maintenance of the
good healthy status is an ancient issue as in the year 500 BC
Hippocrates said that ‘‘Food is medicine, and medicine is food’’.
Chronic liver damage is, in fact, a worldwide common
pathology, characterized by an inflammatory and fibrotic process
that leads to a progressive evolution from chronic hepatitis to
cirrhosis and hepatocellular carcinoma (HCC). The prevalence of
non-alcoholic fatty liver diseases (NAFLD) is of 50–90% in
obese population, 70% in type II diabetics and till 100% in
subjects affected by both diseases.
Polyphenols present abundantly in vegetables and fruits
and have been recognized as functionally active molecules,
possessing antioxidant, anticancer and antimutagenic properties,
as well as exerting protective effects against several diseases.
The plant by-products and the waste of some food
processing or farm land wastes are very rich in the natural
antioxidants. There for the aim of this study was to investigate
the utilization of these compounds in protection or prevention of
some human diseases.
