Abstract

Food 1rradiation is a process by which food is exposed
to ionizlng energy emitted by radioactive isotopes, usually
Cobalt--60. or from fast-moving electrons produced by
accelerators. or from X-n:~ys. Ionizing radiation can perform
four dlstinct functions in the processing of food which
depend on the amount of radiation applied and the type of
food expose.d;
Preserve tood by destroying the micro-organism that cause
norma; spoilage.
-Kill the food-borne parasites and pathogenic micro-organisms
such as trichinella and salmonella.
Slow the r1pening of some fruits and inh1bit the sprouting
of others as potatoes and onions.
-Sterilize or k1ll the adults. Larvae and eggs of insects.
