Abstract

A survey was undertaken for natural plants containing antimicrobial in considerable concentrations. The plants and algae studied were; Rosmarinus officinalis, Eucalptus gloubuls, Ulva lactuca, Spirogyra sp and Corallina officinalis.
These antimicrobials were tested against various species of microorganisms (G+, G-, spore former and yeast) by inhibition zone determination technique using the disk method technique.
Ethanol-water (1:1) extract at 30oC for 24h was the best choice for R. officinalis, P. guajava, P.granatum, L.nobilis, E. gloubuls, C. verum, z. officinale, E. cardamomim , C. proximus , U. lactuca, Spirogyra sp, C.officinalis.
All tested microorganisms showed considerable responses to plant and algae antimicrobials as indicated by formation of inhibition zones.
Determination of the minimum lethal concentration (MLC) of the chosen plants and algae extracts against a number of microorganisms was determined.
Plants and algae extracts were used as bio preservative in Ras cheese. Two concentrations (64,128 mg/ml) were superficially added to the cheese blocks and compared with control. Also these extracts were used as bio preservative in Kofta in two concentrations (5, 10%), added to the minced beef and compared with the control.
One plant and three algae were found to be safe when using as ration for albino rats, suggesting potentially to be preservative for food products.
