Abstract

One hundred and fifty individual random goat’s milk samples were collected from ten flocks in Cairo, Giza and Kaliobeya Governorates. Collected samples were subjected to sensory, compositional and microbiological quality & safety parameters. Most of the examined samples were graded based on flavor and bacteria as bad in percentage of 35.33 and 86.00 respectively. The most flavor defects observed in the samples were goaty and unclean in a percentage of 34.00 and 15.33 respectively. The unacceptable goat’s milk samples based on RRT results were in a percentage of 57.33. The mean value of fat %, protein % and lactose % was 3.69, 3.03 and 4.31 respectively. The mean value of MSCC of goat’s milk samples was 1043.36×103cells/ ml. Regarding the CMT score, 81.34% of the samples were CMT positive and 18.67% of the samples were CMT negative. Among the positive samples, the highest incidence was recorded in CMT (3+) in a percentage of 44.27. The mean values of TMC, TPC and TLC were 12.33×108, 6.35×108 and 1.38×105 respectively, while TSC, TCPSC and TCNSC were 1.77×108, 1.10×108 and 4.53×107 CFU/ ml respectively. S.aureus and S.caprae were showed the highest percentage (66.18%) & (37.50%) of CPS and CNS isolates with beta hemolytic activity respectively. The percentage of methicillin resistant of the isolated Staphylococci was 28.18% and 21.15% for CPS & CNS isolates respectively. The mean value of Coliforms Count was 3.23×106 MPN/ ml. E.coli could be detected in 28.66% of samples. E.coli serovars O18, O27, O112, O114, O144 and O151 could be detected at different percentages. The mean value of TYMC was 5.24×107CFU/ ml. The highest percentage of yeast & mold isolates was Candida parapsilosis and Penicillium citrinum in a percentage of 14.85 and 17.30 respectively. Brucella abortus and Brucella melitensis could be detected by MRT in a percentage of 16.67 and 28.00 respectively. Brucella spp. could be detected by biotyping and PCR in a percentage of 4.67 and 16.67 respectively, while MAP could be detected by ELISA and PCR in a percentage of 35.33 & 0.67 respectively and couldn’t be isolated by conventional method. The degree of acceptability of the examined goat’s milk Vs. Egyptian and international standards was determined. The suggestive preventive and control measures to produce safe and high quality goat’s milk were discussed.
