Abstract

Fish is one of the most important food stuffs, easily digested and of a high palatability .Fish oil represents a good sources of calories and provides many important vitamins as B, A, D, and minerals as phosphorus and iodine in marine fish. Fish is considered as an excellent source of protein of a high biological value.There is an increasing demand for fish and fish product in Egypt to solve the shortage of animal protein.
Fish is subjected to so many risks of contamination, such contaminates may find, their way through many sources then may grow and multiply in fish rendering it unfit for human consumption. Therefore, this work was planed to fulfill this gap using three species of fish (T. nilotica. M. cephalus and Thunnus) which were the most popular consumed fish in in Minia el kameh city, Sharkia province.
A total of 75 random samples of fresh water fish (30 each of T. nilotica, M. cephalus and Thunnus) were collected from different fish markets distributed in Minia el kameh city, Sharkia province. then directly transferred with out undue delay to meat hygiene laboratory under aseptic conditions, where they subjected to Organoleptic examination and bacteriological examination. The texture of muscles varied from firm to tender. The colour (red) , odour and taste of the flesh were normal. In T. nilotica, the mean values and incidence of Aerobic Plate Count and Staph. aureus in examined T. nilotica was 1.8 x 106 + 1.2 x 105 and 1.6x104 + 1.1x104 (16%). While, the incidence percentages of E. coli and Salmonellae were 8% and 8%.
