Abstract

Iron deficiency anemia is the most nutrition problem in teenager period. One possible strategy to prevent iron deficiency anemia in this group is the fortification of favorite food as candy. So, this study was designed to know the effect of iron, vitamin C and soy bean fortified candies on the iron status of teenager aged 10-16 years. The teenager were randomly assigned to 4 treatment groups: A control group, B fortified group with iron (n = 20), C fortified group with vitamin C (n = 20) and group with soy bean. Every day for 12 wk, 5g (one piece) candy was given to the teenager. After six months the effect of the different experimental candies on blood components, stool components, oxidative stress enzymes, molecular study DNA and in vitro studied ”micro nucleus test” to determine it’s protective from toxicity. The results of the present study can be summarized as follows: 1. The type 1 contained 87.89, 1.4, 0.5, 0.8, 2.2 and 361.66% carbohydrates, protein, lipids, fiber ash and total carbohydrates respectively. Concerning type 2, it was found to contain0.9, 0.2, 2.8, 0.6, 86.85 and 352.8 % protein, lipids, fiber, ash, carbohydrates and total calories respectively, while in case of type 3 contained 2.5, 0.8,2.9, 0.9, 83.78 and 352.32% of the same content respectively. 2. from these results it could be noticed that, the type 3 the highest in protein, lipid and fiber while type 1 contained high in carbohydrates and total calories. type 1 was higher in zinc while, type 2 was the best in calcium and iron. Type 2 and 3 had equal amount of selenium which were higher than type1. 3. The levels after feeding showed a significant difference with the levels of hemoglobin before feeding. There is no significant difference between type 1&3 before feeding and between type 1 after feeding & type 2 before feeding. The account of blood cells was higher after feeding on three types of candies than before the feeding; the best type was type 2 which caused the best account of blood cells. the levels of blood platelets was improved after the feeding on all types of candies and the best one was type2 which had the best effect and kept the levels of blood platelets in normal range. 4. The white blood cells account showed in type 1 levels4.73± 1. 13, 5.78± 1. 28 and 5.17± 0. 45Cmm for type 1,2 and 3 respectively before feeding and 3.70 ± 0.50,4.30 ± 0. 97 and 4. 10 ± 0.36Cmm for the same types respectively but after feeding on the tested candies.
