Abstract

A total of 125 raw milk samples were collected randomly from different parts of urban and non urban areas in Cairo governorate.These samples sanitary examined and examined for presence of some chemical hazards.The results obtained were summarized as follow:Titratable acidity test:
The main values of the examined raw milk samples of urban areas for titritable acidity was 0.148% ± 0.0030 and for non urban areas was 0.169% ± 0.0023. Detection of chemical preservatives: The results of general test indicates that 3 of examined milk
samples of non- urban areas and 1 of examined milk samples of urban
areas were positive for inhibitory substances and preservatives. The
results also indicated that 3 samples of non urban areas and one sample of
urban areas were positive for formalin. The results also indicated that all
samples of examined raw milk for urban and non urban areas were free
from adulteration by boric acid.
Detection of carbonates: 2 samples of urban areas milk samples were positive for presence of carbonate while non urban areas milk sample were free from carbonate adulteration. Detection of urea and melamine as added substance: The results indicated that all samples of examined raw milk for urban and non- urban areas were being negative of addition of urea and melamine.
