Abstract

Correlation between parasitism, microbial load and meat quality of the Egyptian food animals was studied.
I — Parasitological aspect
Parasitological aspect included a survey dealt with the
incidence of parasites among food animals at some Behera abattoirs (Damanhour, Rashed, Kom Hamada and Kafr EL Dawar abattoirs) during two years (1990 & 1991).
During 1990 the incidnce of liver flukes infestation was 13.11%, 18.01%, 13.65, 6.16% and 0.05% in cattle, buffaloes, sheep, goats and camels, respectively, while during 1991 it was 13.35 20.o%, 18.48%, 7.39% and 0.06%, respectively .
The incidence of hydatidosis among camels, cattle, buffaloes, sheep and goats during 1990 was 31.34%,0.12%, 0.21%, 0.8% and 0.15%, respectively . While during 1991 it was 33.55%,0.06%, 0.39%, 0.73% and 0.23, respectively .
During 1990 the incidence of hydatid cysts in camel lungs, liver and spleen was 72.85%, 9.62% and 1.72%, respectively, and in both lung & liver, lung & spleen and liver & spleen was 7.22%, 6.19 and 0.17%, respectively, while, in lung, liver & spleen collectively was 2.23%. But during 1991 in the same succession it was 69.79%, 11.28%, 1.91%, 8.68%, 4.69%, 0% and 3.65%, respectively.
The incidence of Cysticercus bovis during routine meat inspection among cattle and buffaloes was 5.01% and 0.21% during 1990, respectively, while during 1991 it was 5.44% and 0.19%, respectively.
The incidence of Cysticercus bovis during detailed examination among cattle and buffaloes was 8.83% and 1.14% during 1990, respectively and 9.32% and 1.39% during 1991, respectively.
The incidence of Toxocara vitulorum infestation among veal was 64.62% and 67.52% during 1990 & 1991, respectively.
Seasonal prevalence rate of infeststion with Toxocara vitulorum was 78.49%,70.75%, 51.25%, and 52.47% in Winter, Spring, Summer and Autumn during 1990, respectively and 81.77%, 71.54%, 48.72% and 57.23% during 1991, respectively.
II — Microbiological aspect
The mean values (log) of aerobic plate count of shoulder muscles in normal cattle, Cysticercus & Fasciola infested cattle, normal & hydatid infested camals,normal & Toxocara vitulorum infested veal were 3.676, 4.920, 5.068, 4.057, 4.809, 3.669 and 4.920, respectively, while the mean values (log) of Enterobacteriaceae count were 2.754, 3.197, 4.101, 2.856, 3.553, 2.788 and 3.870, respectively.

The mean values (log) of total anaerobic count were 3.148, 3.805, 4.468, 3.418, 4.079, 3.007 and 4.368, respectively.
III — Chemical aspect
The moisture percent of muscles in normal cattle, Cysticercus, Fasciola infested cattle, normal, hydatid infested camels, normal and Toxocara vitulorum infested veal was 72.45, 72.25, 73.7, 71.25, 71.9, 73.3 and 74.45, respectively .
The total protein content was 19.989, 19.9333, 19.425, 20.069, 20.267, 19.374 and 19.028, respectively.
